chips bags are flushed with nitrogen gas to prevent rancidity... I.e. aerial oxidation of food...

Fats or oils are used in the preparation of chips. After a long time they turn rancid due to oxidation by the air contained in the bags. Nitrogen replaces oxygen present in packets. Being inactive, it prevents rancidity.
