we use them becase they are presevatives and microbes don't grow when thir is no moisture and so salt and sugar are sprinkled on picle and vinegar is also used ..

We use salt and sugar to preserve pickles because these help in the preservation.and also because the pathogens and the bacteria cannot survive in salty conditions so to prevent bacteria and all other microorganisms that spoil the pickles salt and sugar are used...
