This is because the weight of the cork is less than the up thrust so if the upward thrust is greater than the weight so the net force will be in upward direction. We can also say that the density of the cork is less than that of water or any other liquid in which it is kept. I hope u may understand...

The cork released in water come up due to the upward force which is known as Upthrust acting upon it.
