technology! Comparing what one farmer could produce 200 years ago towards today is a huuuuge change. While before industrialization the farmer family could mainly just sustain them self, today one family feeds many thousands of people. Meaning also, less work is required, and looking at the share of people working in the agriculture field in Germany shows that as well:
