why does the sound from a tuning fork be flat where as the sound of a sitar sounds shrill?why???

The frequency of an instrument is much higher as compared to a tuning fork. Not to mention, a tuning fork can have no variations in waveform or frequency (Its loudness can change due to variations in amplitude) but otherwise a tuning fork produces a flat singular principal note with no subsidiary notes which is called a monotone. It never changes
