Think simply ! The food will be coocked fast of temperature is more. We all know the boiling point of water. That is 100 degree Celsius. water can not boil over 100 degree.but if we increase thepressure water can boil on higher temperature. Itsboiling point increases.and food boils upto 121 degree Celsius in pressure cooker. which is quite high for food and can save a lot of time and energy. Thus pressure cooker is energy efficient from 70 to 90 percent. You can see relation between temperature and pressure which was given by Clausius–Clapeyron equation.
