I would like to furthermore add to this thread that ionic compounds have high melting and high boiling point which definitely do not allow to use it in perfume as they will require too high a temperature to break them from their respective lattice structure and then diffuse off in the surrounding. In addition to, ionic compounds having high melting and high boiling point, they are considered to be non-volatile due to their inability to evaporate/diffuse into the atmosphere like many other liquids used in perfume making such as, alcohol.
