Due to lack of Dissolved oxygen in the atmosphere, they die.
In the atmosphere oxygen is present along with various gases but in water it is only dissolved with water. Hence the fishes die when taken out of water.

Fish breathe in oxygen in dissolved form of water because it have gills and when fish is taken out of the water it can not take free oxygen in air that's why fish die outside water
