why is oxidation state related to gain or loss of electron?

In this reaction the lead atoms gain anelectron (reduction) while the oxygenloses electrons (oxidation). Magnesium loses electrons and is therefore said to be "oxidized", whereas the chlorines gain electronsand are said to be reduced.
