why is pickled mangoes still good after 1 month immersed in concentrated sugar solution? (4 m)

pickled mangoes will be good still for 1month only when immersed in conc. sugar solution becoz the the coated pickle is of acid citation when kept out it can can react with air get spoilt but only when u have kept in base it doesn't get spoilt
