Why is the electromagnet inside a doorbell magnetised and demagnetised alternatively?

I would connect it to a variac rather than a DC supply, and monitor the current. I would slowly increase the voltage applied until the current was around 80% of the nominal rating, then very slowly decrease it to zero.
