Vegetation can also be used to control water erosion by limiting surface processes such as sheet wash and overland flow. Vegetation can provide a considerable contribution to the stability of slope through enhancing soil cohesion.

Answer:

For growing vegetation, you need sufficient amount of water, but if you are growing in a steep slope, than the water may run away from your crops. The washed out water will also take along with taking with it the good quality soil.

This results in causing erosion when rain water falls on the vegetation and dislodges soil particles which are then carried away by the flowing water down the slope.

Moreover, there is less moisture and sunrays exposure in the steep slopes, that makes then unfavorable for vegetation.
