The specific heat capacity of copper is very low (0.4J/g°C) due to which the heat required to raise its temperature to a certain amount is less. Again, the thermal capacity of copper is high so that it can store the heat for a long time.
Thus base of the cooking pan is made of copper so that the heat is distributed within the utensil evenly and the food gets cooked quickly and properly with less amount of heat and the food stored in it is kept warm for a long time
