Potato chip bags are not full of air, but of nitrogen gas. This is done to prevent the chips from oxidizing, which is part of what makes them go stale.
Oxygen is very reactive, and likes to combine with other molecules whenever it can, causing chemical changes to take place.
potatoes have a lot of starch present in them and they may go rancid when exposed to Oxygen . This process is called Rancidity !
The Nitrogen gas is to just slow down this process .

When foods such as crisps are packaged, the bag's empty space is filled with an inert gas such as nitrogen to prevent the food spoiling too quickly. Gas is used to replace oxygen which causes food to oxidise, the chemical reaction that turns crisps stale and apples brown.
