why vestigial organ evolve again amd again ?

Vestigial organs are the ones which become useless over a period of time.
For example, earlier manĀ used to eat raw plants and grass before they learned to cook, so to help them inĀ digesting the plants and grass, a body organ called appendix used to produce cellulase. but over a period of time, humans evolved and learned to cook so they no longer eat raw plants and grass hence there is no need of cellulase anymore that is why Appendix becomes useless, in scientific terms it becomes our vestige organ.
Vestigial organs can be removed from the body.
