The chemical reactions with our food start in the mouth. The salivary glands produce an enzyme called ptyalin. It breaks down starches into dextrose and maltose, types of glucose, by adding a water molecule into the starch .
Fat droplets + water + (lipase) –> glycerol + fatty acids.
