The condition produced by aerial oxidation of fats and oils in foods marked by unpleasant smell and taste is called as Rancidity.
Rancidity can be prevented by:
1. By adding antioxidants : Antioxidants are the substances which prevent oxidation. The two antioxidants used are BHT[Butylated Hydroxy -Toluene]
and BHA [ Butylated Hydroxy Anisole]
2. Rancidity cane be retartded by storing food in air tight containers.
3. Rancidity can be prevented by packing food items containing fats and oils in nitrogen gas.
