Water escaping through the walls evaporates and in so doing removes the appropriate amount of latent heat of evaporation, lowering the surface temperature, and by conduction the general temperature.

****This happens because earthen pot has infinite pores in it from which some water peeps out and gets evaporated during summers.
As evaporation leads to cooling water inside the pot remains cool.
