If temperature increase with the depth under earth then why the water obtained from the wells is observed to be cool in summer days

it is because water has a high specific heat capacity. so it does not warm quickly. and the water which is in the well is in direct contact with atmosphere so the water cools by transfer of heat from water to air.

The water is cool because the water gets heated slowly than land so the water remains cold in the Wells in the summers also.
