During flame test, you provide energy in the form of heat to the particular element. Mostly, they are the s block elements, and this happens because as we provide them some energy, the electrons in the last shell, get excited and jump to higher energy shells. But they cannot stay their for long because that would cause instability in the atom, so they come back to their original energy level. Here you can see, they first jump to a higher energy level than come back to a lower energy level. This coming back to lower energy level, makes them lose their energy along the way, which they release in the form of photons of specific wavelengths. These wavelengths give of the colour we see.
So generally in Barium salts, in Copper salts, and somewhat in Zinc and Manganese salts too, the flame impart all sort of green colour. The apple green or the grass green specifically belonging to Barium.
