The process of conversion of sucrose into ethanol involves two steps called as glycolysis and catalysis.

Different catalyst is used in these two steps.

The first step involves the catalyst pyruvate decarboxylase in which the glucose molecules are broken down into couple of pyruvate molecules.

The second step is the catalysis process in which the catalyst dehydrogenase, alcohol is used.
