According to Newton's third law of motion, to every action, there is an equal and opposite reaction. So if we try to catch the ball instantaneously as the momentum is very high, force which needs to be applied by our hands to stop the ball is very high because we know that force is directly proportional to the change in momentum. So by withdrawing the hands, we increase the time which in turn reduces impact. This is why hands are withdrawn to catch a fast ball
