The ripening fruits soften due to solubilization of pectate of middle lamella.
The outer cell walls of fruits contain a substance called pectin. Pectin thickens the cell wall and provides strength. It also connects adjacent cells by providing an additional layer of pectin called lamellae. When a fruit gets matured and ripening starts the enzymes breakdown this layer of lamellae which causes loosening of the attachments of cells with each other. The binding of cells looses and the layer of fruit also loses elasticity and hardness. As a result the fruit becomes soft when ripe.
