Statement - To protect forests means to conserve air, soil and water.

Well, this statement is a true one. Forests are also called the lungs of earth. They're the most important part of nature which sustain life. Indirectly we can say, forest means life. 

Now returning to your question - 

Forest means to conserve air! 
Well, a group of trees form a forest and trees carry out the process of photosynthesis which releases oxygen. Plants need oxygen to grow and flourish, if they get their oxygen requirement through the polluted air, plants will not be able to respire properly.

Forest means to conserve soil!
There are many trees in forests whose roots extend to the soil. This binds it and reduces soil erosion. If the soil gets polluted and soil pollution takes occur, something disastrous may happen to the forest.

Forest means to conserve water! 
Water is one of the most vital resources for for us to grow higher. Its true that forest brings good rainfall and due to this we're being asked to plant more trees in our surrounding.
