★ Saponification is a process that involves conversion of fat or oil or lipid into soap and alcohol by the action of heat in the presence of aqueous alkali.

★ Soaps are salts of fatty acids and fatty acids are mono carboxylic acid that have long carbon chains e.g. sodium palmitate.

★ Saponification is a process by which triglycerides are reacted with sodium or potassium hydroxide to produce glycerol and a fatty acid salt called "soap."

════════════════════

★ The triglycerides are most often animal fats or vegetable oils.

★ When sodium hydroxide is used, a hard soap is produced.

★ Saponification is the hydrolysis of an ester under acidic or basic conditions to form an alcohol and the salt of a carboxylic acid.

★ Saponification is commonly used to refer to the reaction of a metallic alkali (base) with a fat or oil to form soap.

★ Example: Ethanoic acid reacts with alcohols in the presence of a conc.
