Okay let's keep it really simple. Lead has a very high density and Alpha, Beta particles cannot penetrate through it. Lead helps to concentrate the beam of these particles towards the gold foil. Also these particles if penetrate through body, it may destroy the DNA and I guess you won't be happy about it.
