When 7/8 is written as percentage it can actually described as a disc divided into 8 parts out of which 7 parts are shaded that is we calculate the percentage out of 100. Hence we simply divide 7 by 8 and multiply it by 100 which gives 87.5%.
When written in decimal form we just maintain the decimal place as we divide 7/8 as 0.875
