it is so becuase the process of fermentation need heat to change the milk into curd with the help of bacterium lactobacillus..and in summers the atmosphere is already warm and moist as compared to the winters thats why it takes less time to make curd in summers

Because the temperature reaches in summer at which the bacteria lactobacillus grow 35°c-50°c and help in preparing of curd on the contrary in winter the temperature is low so the temperature is insufficient for the growth of lactobacillus .
