why when we steam milk the milk go to high temperature even we stop steaming

steaming the milk at the particular temperature causes frothing and foaming.


When you steam the mil at the particular temperature, it remains hot though you stop steaming it.


This is because the temperature of the steamed milk is quite high than that of the boiled milk thus taking long time to cool down.
