write a difference between the tender coconut water and the thick, white kernel of a mature coconut and their ploidy.

Endosperm is formed when male gamete fuses with two polar nuclei.  

Coconut water is part of endosperm of coconut and develops as post-fertilisation framework from primary endosperm nucleus.  

In young coconut primary endosperm nucleus separates and forms large number of free nuclei without cell membrane giving a liquid shape.  

Later stage when coconut matures in addition to free nuclei many cells enclosing variable number of nuclei is visible.  

These cells separates fast and form compact mass of cells which start settling at end of cavity and layers of cellular endosperm start to be visible.  

Mature coconut liquid endosperm becomes milky covered by cellular part called kernel but it doesn't has free nuclei/cells.

So, coconut water is free nuclear endosperm and white kernel is cellular endosperm.  

Ploidy of both is triploid.
